Asia’s 50 Best Restaurant recently declared the winner of Gin Mare Art of Hospitality Award for 2020 and Les Amis in Singapore takes home the crown. By Kumar Shree

The award, which is determined by Asia’s 50 Best Restaurant voting academy recognises a restaurant that demonstrates outstanding service and exceptional hospitality. The front-of-house excellence, and interactive, engaging and personalised exceptional service are some factors that has helped Les Amis win this honour. All of this is helmed under the leadership of French Director of Culinary and Operations Sebastien Lepinoy, who joined the restaurant in 2013.

William Drew, Director of Content at Asia’s 50 Best Restaurants says, “A fine-dining institution in Singapore since 1994, Les Amis has earned justified plaudits for its impeccable front-of-house operation and is recognised as having one of the best wine lists in the region. Since the launch of Asia’s 50 Best Restaurants in 2013, Les Amis has maintained a constant presence on the list and is a worthy recipient of the Gin Mare Art of Hospitality Award.”

Lepinoy, who himself is a protégé of the late Joël Robuchon believes that exceptional service comes from comprehensive training. He has instituted a residency programme to send talented staffers to visit French-based producers for on-the-job training. This enables the restaurant to have in-house expert in a particular field. Apart from this, the restaurant also hires external consultants who have worked with renowned five-star hotels and airlines to work with and train the staff.

Chef Lepinoy, Director of Culinary and Operations at Les Amis says, “My team and I are incredibility honoured to receive the Gin Mare Art of Hospitality Award. Chef Lepinoy will receive his trophy as part of the eighth annual Asia’s 50 Best Restaurants awards. Given the current travel restrictions in Asia, the event will take place in form of a virtual awards ceremony that will be streamed on the Asia’s 50 Best Restaurants Facebook page and YouTube channel on Tuesday, March 24 from 4 pm onwards (HK/SG; 5 pm JPN).
