In the era of emoji-inspired menus and molecular gastronomy, India Grill at Hilton Garden Inn New Delhi believes in keeping it simple. We find out over succulent paneer tikkas, and more. By Rashima Nagpal

It begins with a refreshing litchi mocktail that quickly makes up for the slightly underwhelming mood of the restaurant, and truly makes me feel welcomed. I am at India Grill, Hilton Garden Inn New Delhi’s multi-cuisine restaurant, to try out their limited period Lunch Menu, which comprises four courses.

I am glad I don’t have to think about what I’m going to eat; Chef Shekhavat takes it upon himself and decides to serve the Shanghai Vegetable Rolls and Lahsuni Paneer Tikka to begin with. The crust of the rolls is crispy-thin, and melts in the mouth, and so does the paneer that is well-seasoned and barbecued to perfection. Together with the sweet chilli sauce and the homely green chutney, they almost taste like a bite of nostalgia. I tell Shruti, my host for the day, that I feel like I’m in the Delhi at the turn of the 21st century. With its modest flavours as well as presentation, India Grill creates that kind of atmosphere. And, it’s strangely refreshing.

Owing to the high temperature of the day, I skip the soup and call for another ‘welcome drink’ instead. This time, it comes with a base of orange juice–refreshing nevertheless. For mains, I decide to ditch the North-Indian fare of dishes to ‘make my own pasta’. We call for two varieties for the table–a Penne Arabbiata with mushrooms and a Fusilli Pesto with broccoli.

Despite being full, I cannot escape having seen the New York Cheesecake and Brownie with Ice-Cream on the menu. I am glad I didn’t, and neither should you.
