If you have been scavenging the Maximum City, looking for a burger that can ‘flip’ your mind, we have some news for you! Bun & Only has opened shop in Bandra. It’s barely been a week since their launch, and they’ve already been making waves with people calling them the “best burgers in the city!” By Karishma Sakhrani
There is a serious level of passion for burgers and excellence at every level that is visible through everything the brand is doing. From the bold black and yellow packaging to the creative yet accessible menu. So I soon join the pro-camp.
Sameer Uttamsingh, partner at Bun & Only, and founder of Acme Hospitality spent much of the earlier part of the lockdown eating his way through every burger delivery place in Mumbai in search for the perfect burger to satisfy his craving, which he would otherwise fulfil on his travels abroad. He got so consumed by the burger hunt that he started working on the concept for Bun & Only with his partner Shantanu Mohite. Given that Sameer has more than 20 years of experience in setting up bars and restaurants in the country, Bun & Only was fairly easy to turn around so quickly. Sameer and Shantanu have spent the last two months building this brand from scratch, which includes tasting more than 200 burgers to perfect the menu!
The menu is concise, well thought through, and executed with absolute panache. Conceptualised and designed by the partners along with consulting chef, Gracian D’Souza, the launch menu comprises eight burgers, loaded fries, and a banging burnt Basque cheesecake. Each element is made from scratch and they each make an instant impact. Especially with the ‘&’ logo stamped proudly atop each bun!
The offering includes vegetarian and vegan burgers, as well as chicken, pork and lamb. I’ve quickly recognised a personal favourite in the Portobello & Blue Cheeseburger, which has a big mushroom steak that’s roasted with blue cheese crumble and sandwiched between perfectly fluffy homemade buns with some zingy sauerkraut and chunky tomato relish. One bite and I was swooning! This burger has so many levels of umami!
I ask Sameer to talk about his favourites, the Teriyaki Chicken and the Pulled Pork. “They’re exactly how a burger should be – juicy, sticky and massive flavour bombs. Six hours braised pork and burnt butter bacon mayo cuddle up together with fried fennel and barbecue sauce for a smoky, meaty mouthful in the Pulled Pork Burger,” he says.
The quality of the ingredients used is not only of a very high level, but a lot of the produce is sourced from artisanal local suppliers. They’re sourcing their mushrooms from Mushroom & Co, cheeses from The Spotted Cow Fromagerie and much of their herbs and veggies from local, organic farmers.
The sides are limited to loaded fries and a pickled red cabbage salad. I was admittedly hoping for more. Truffle fries might have become a standard menu listing, but Sameer explains – “the Bun & Only version is slightly different from the regular. Our fries come with a side of homemade truffle butter you can dip in to. The flavour is amped up, while also allowing people to reheat the fries (separately) before digging in.”
The showstopper, however, is unarguably the classic Burnt Basque Cheesecake. The burgers may be the headliners of Bun & Only, but this one simply cannot be ignored. They’ve nailed the characteristic burnt crust and creamy interior to create the perfect dessert and end to the best meal I’ve had in a very long time!
