If you think a portion of juicy fried chicken smeared in a variety of sauces and squeezed between two crunchy waffle halves doesn’t have much to amaze, think again. Or rather, arrive at Bruxie to have a bite, and be absolutely bowled over by the Californian delight. By Sushmita Srivastav

Although I had always drooled over the Instagram pictures of those deep fried chicken waffle sandwiches with a side of creamy dips and fries stacked in a metallic plate, the thought of digging into the unique Californian snack just 10-minutes away from my home had never crossed my head. And finally, after anticipating the taste for years, sitting at Bruxie‘s new outlet in G-Town, all I could think of was how different could it really be. It’s just fried chicken and waffles, after all.

But first bite into their signature Kickin’ Waffle Sandwich, and I forgot what I was wondering about a minute ago. The indulging flavours of the smokey spice rub, tangy sauce, fresh shredded lettuce, and some pickle took over me, and I knew, in an instant, this was different for sure.

Thanks to its tastiest, messiest, and the most irresistible street food, California adds spice to America’s rather predictable menu. The golden state has been, through years, kicking off global food trends and has always served the world with the most creative street food. It was here that the famous fried chicken waffle sandwich was born. Bruxie has been serving the unique snack in California, Colorado, Las Vegas, South Korea, and Philippines since 2010, and has finally entered India with its unique recipes to win the hearts of fried chicken lovers.

Relaxed informal seating, upbeat music, menu painted on the wall, and an interactive live kitchen—the US-based restaurant chain certainly knows how to keep it fast-casual but appealing, and that isn’t just limited to the milieu. Each dish here can be tagged snacky and yet deliciously filling.

I had already tried the Fried Chicken Salad that came loaded with bacon, avocado, egg, tomato, chives, cheddar, and of course, grilled chicken drenched in ranch dressing. The salad had very balanced flavours and portion was good enough for two people. Next up was The Rebel Bun Sandwich. Some carnitas-spice rubbed chicken, pickled red onion, chipotle mayo, and cabbage-jalapeno slaw squeezed between fresh buns—bliss!

If you like eggs, do try their Super Cluck Egg Waffle Sandwich that comes creatively done with a sunny-side up egg and maple-glazed fried chicken put together with cheddar, bacon, and sriracha mayo. As they say, the classic egg-chicken combo can never go wrong!

But my absolute favourites would still remain the Roasted Mushroom and Goat Cheese Sandwich and the Crispy Tenders served pipping hot with fries, Buffalo sauce, and Housemade Ranch sauce. The button mushrooms mildly roasted to be served in a waffle sandwich along with sun-dried tomatoes, herb goat cheese, arugula, lemon vinaigrette, and balsamic reduction, tasted nothing less than divine. Also, the tangy buttery flavour of the hot sauces made the crispy tender chicken delectable than ever.

The delicious Creme Brulee Sweet Waffle coated in maple syrup and topped with fresh strawberries, was the ending my first-ever visit to Bruxie deserved.
